 Have confirmed the behavior with tags, and I'll note here that the same
 thing is true of categories. You can add them in the Bulk Editor but not
 change them or remove any--the UI doesn't show which categories are
 checked.

 The Quick Editor does show which categories are checked, and you can
 uncheck and recheck to your heart's content.

 I took a look at @paaljoachim's Figma prototype--it's faithful to the tags
 UI in the post editors, both block and Classic, and therefore slightly
 different from the Categories UI. My question: should it be?

 @paaljoachim, does it make sense for you to own this process, and the
 ticket, going forward?

 Or, should we use a single pattern style for both categories and tags, and
 standardize that across Bulk, Quick, block and Classic editors?
