 In this case, I changed my default category just before deleting the extra
 categories (to "ebookers.ch" -- slug = "ebookers"), child category of "My
 Projects" which already existed.

 So to be clear, I created a new category ("ebookers.ch"), then changed my
 default category to it, batch-deleted the extra categories I wanted to get
 rid of, changed my default category back to what it was initially ("Stuff
 that doesn't fit") and then viewed my list of posts, and discovered they
 were "uncategorized".
