 Recently I was reading
 https://github.com/WordPress/gutenberg/issues/72838

 And it's weird, but I never thought about this and could be the solution
 to all my problems (aka, FTP server, Mailing w/mailhog, SSL, etc... for
 testing). Being able to have a default Docker override file, could help
 with having special setups.

 Similar to this #52668 but targeting the whole `docker-compose.yml`

 This could potentially close:
 #63421, #63172, #63135

 Before thinking in a patch, I would like to hear opinions.
