 Hi @rickers and thank you for the report.

 I am able to reproduce this with any theme that registers patterns without
 categories.
 Both classic themes and block themes.

 The categories parameter is not required, so the pattern screen should not
 show an error when a pattern are missing categories.

 Because the problem is related to the editor and not the theme, I have
 created a new issue in the Gutenberg GitHub repository:
 https://github.com/WordPress/gutenberg/issues/66888
