 Part of this sounds like the following issue on GitHub:
 https://github.com/WordPress/gutenberg/issues/21876

 The gray color might have happened because switching to the "Logos Only"
 style removes the "Icon background" color setting in WordPress 5.9.3. I
 tried the same in WordPress 6.0 Beta 1, and it seems to have been fixed
 for the upcoming version.
