 I just retested.
 I noticed that "å" remain "å" in WordPress 5.8.1. Tested with naming an
 image æøå and only the å was not converted.

 Å should become either aa or a instead.
 It is fine by me if we change å to a or aa. It is nice to get a fix in
 place.
