 Thanks for reporting! I'm pleased to find that this was reported and
 apparently fixed already on GitHub:
 https://github.com/WordPress/gutenberg/issues/30505

 The cover blocks within the editor do not have the custom `alt` text in
 5.8, but it should be available in 5.9.
