 Could you clarify which editor you are using and what WP version you
 upgraded from?
 I have seen several complaints that the block editor does not remember
 your last size choice, like the classic editor does.
 I just tested with block editor in 5.7 and it uses the large image size.
 In my test, the classic editor in 5.7 still remembers the last size used.
