 Hey @lumay

 In WordPress 5.7 the text button has been switched out with an icon that
 looks like a duplicate file icon, but it is actually a "Convert to regular
 blocks icon".
 Because it is so vague I made the Github issue to get a text link into the
 3 dot drop down.
