 Howdy @pigdog234 looking at the Youtube Widget Responsive plugin's widget
 form I noticed that the options in the form are handled by
 [https://plugins.trac.wordpress.org/browser/youtube-widget-
 responsive/trunk/youtube-widget-responsive.php#L851 a global jQuery ready
 event]. The plugin should use the documented
 [https://developer.wordpress.org/block-editor/how-to-guides/widgets
 /legacy-widget-block/#the-widget-added-event widget-added event] to hook
 event handlers for the form. Otherwise some functions, such as the buttons
 to assign a preview image from the media library, will not work.

 In my testing, on stock 5.8 with only the  Youtube Widget Responsive
 plugin I could not reproduce the problem with saving.
