Thanks for the work on the text, @michelleweber and @kjellr! It seems like
there's a little confusion here, hopefully I can clarify it a bit. 🙂

The next major release of WordPress ''is'' version 5.0. We'll be enabling
the block editor by default, but we won't be getting rid of the classic
editor: it'll still be heavily used as a fallback when the block editor
doesn't work. (Say, for a particular custom post type, or when an
incompatible plugin is being used.) It just won't be the default option.

have access to the classic editor.
This is kind of correct, but not really what we want to convey. The
Classic Editor is about giving people the option to continue using the
editing experience they're familiar with, particularly for more complex
sites that may have plugins that aren't ready for Gutenberg yet.
@chanthaboune's earlier suggestion conveyed the correct information, here
it is in a more active format:
''The next major release of WordPress enables Gutenberg by default, but we
understand if you need some extra time. To opt out, install the Classic
Editor plugin—you can continue using the classic editor while you ensure
your plugins work correctly with Gutenberg.''
I'll have a patch with this in a bit, we can tweak the language between
now and RC1.
