Bundled themes have their own styling for lists, however the new editor
has some default CSS for lists as well. As a consequence, on most bundled
themes, there's a notable difference between what users see in the editor
preview vs. what they see in the front end.
For example, Twenty Fifteen uses a beautiful "hanging punctuation" styling
for the lists: it's a design and typographic choice which is not reflected
in the editor:

One more example: Twenty Nineteen aligns the list items with the left edge
of the content area, but in the editor there's some visible indentation.

One of the main goals of the new editor is to have a more accurate preview
of how the content will look like in the front end. I'd tend to think the
list styling should better match the front end design.
I'm not sure this should be entire responsibility of the themes: on one
hand, the bundled themes should show best practices and try to provide
some list styling for the editor. On the other hand, maybe Gutenberg
should use some less opinionated default styling for the lists. Also, this
actually applies to all themes, not just the bundled ones. Glad to move
this issue to the Gutenberg GitHub if that's the most appropriate place.
