 This also just happened to me when I went to investigate this report.

 The following is just an educated guess, but it fixed the problem for me.

 Prior to using using Gutenberg I had no need for the REST-API on the site
 I tested this on, so I had rule in the Application Firewall (WAF) of the
 security plugin I use to block all accesses to `/wp-json/*`.  D'oh!

 Once I removed that WAF rule I no longer get the 500 error.
