 Also I think we could lighten the sanitizing for backwards compat for
 cases like https://core.trac.wordpress.org/ticket/38583#comment:20 so we
 don't sanitize the object if there's no `properties` list. The typical
 case for the REST API sanization right now is: is it's something not
 understood, pass it through, else sanitize it
