 Thanks @lovelucy! The plot thickens. You and I are both running identical
 setups.

 I had tested an XLS file I found lying around yesterday and got
 `application/vnd.ms-excel`. But since we now know our environments are the
 same, the devil must be in the file.

 So this morning I exported a few new XLS test files from different
 programs. Sure enough, one of them (from LibreOffice) turned up the
 `application/vnd.ms-office` type.

 Now to figure out why... haha.
