 Thats not a problem, most settings are saved to the database, though not
 all in some cases.
 Just download the plugin folder with FTP, rename it locally and save it.
 To be safe, back up database.
 Remove plugin from the live site.
 Upload new plugin version.

 If settings are lost, just remove the new updated plug in from live
 server.
 Rename original back up on local system.
 Upload original back to server.

 Same process really as you would do before a WP update
