 @Angristan you can remove those define's from wp-config now if you want.

 I think this is intended behavior.  Those defines are for "temporarily"
 over riding the URLs.

 If you need/want to change them from PHP you can with update_option
 described here: http://codex.wordpress.org/Changing_The_Site_URL
