 @sunflowermom - You can still edit images.

 When you insert images, you get the same picker for location we've had for
 a while: https://cloudup.com/cTKRvh0Q4wu

 When you click on an image in the visual editor, it has a white pencil on
 a black background. Click that to edit and you get this:

 With galleries, again, click on the edit icon (pencil) and there's an 'Add
 to Gallery' link on the left side. Click that and add :)
