 Not sure how simple this is, based on our current conventions.

 On Settings > Writing, we have Default Post Format, Default Link Category,
 and Default Post Category.

 However, we also have Default Email Category. It is this field that gets
 obeyed for post-by-email, not Default Post Category.

 We would need a new Default Email Post Format setting to keep consistency.
