From my experience I think what you'd find as soon as you got theme provided layouts for categories would be the need for category meta and some of the other things that are provided by Pages (Pages are implemented as posts where post_type='page'.) For example you'd probably find plugins that you'd want to apply but that wouldn't work because there was not post to apply to. FWIW.

I'd say they don't dig their heels in the sand, it's more like they cast their legs in steel-reinforced concrete. Just sayin... :-)
