I know *exactly* what you mean, Others seem to want it small to keep the editing windows down to a managable size (aparantly they dont like full window width editing).

Which is why i made this quick plugin: http://dd32.id.au/wordpress-plugins/remove-max-width/

Just adds a style tag to the admin headers to remove the max-width on the wrap and whatnot.
