Any 4:3 ratio image is acceptable.

880x660 fits best with the current version of WordPress (3.8). Larger
than that would not give much, if any, improvement in the theme
browser.

Also consider filesize of screenshot images. These are typically the
largest single file in most themes, and generally only looked at once.
It might be best to make them as small of a filesize as possible, for
speedier downloads and such.
