Arthur,

 I guess regardless of whether you are using UTF-8 like I do, the
question is the mb_language setting at your server. Mine's set to a
confusing "Neutral", which garbles everything. Also, in thunderbird,
what looks like the headers for the email appears in the body of the
message.
