 I saw that today as well. It looks like they removed it as an available
 container from their documentation, and from the repository that is
 responsible for building and pushing out new containers, but the old
 containers that were previously built and tagged for 5.7.x are still
 available: https://hub.docker.com/_/mysql/tags?page=1&name=5.7.

 It's unlikely that they delete those manually. For example, the 5.5 and
 5.6 containers are also still listed there. Just not mentioned in their
 docs.
