 As I mentioned above, if the new filter isn't accepted into core, I would
 simply use the existing 'wp_calculate_image_srcset_meta' filter to delete
 the mime-type value for all images.  This isn't rocket science, and I'm
 not trying to re-invent the wheel.

 Let the GIF logic run during upload and add needed details to the
 metadata.  There is no need to do this on the front end.
