 Hey janvbear, thanks for the report!

 The [http://php.net/manual/en/timezones.america.php PHP manual] shows
 America/Chicago as a choice for the Central timezone. It's possible you
 could be on a system without this however.

 At the heart of it, this isn't something created exclusively by WordPress,
 but rather is the [http://en.wikipedia.org/wiki/Tz_database Olson timezone
 database]. We don't generally add new timezones to this ourselves, as
 IANA/ICANN are responsible for adding new timezones there, and they do a
 pretty good job of keeping it current.

 It's possible that the timezone in Texas could diverge in the future, in
 which case I'd expect them to add a new timezone to accommodate that. I
 don't believe they add new timezones unless this happens, but you may be
 able to [http://www.iana.org/time-zones suggest adding Texas-specific
 timezones].
