 Correct, the `show_admin_column` argument is `false` by default.

 It's [https://core.trac.wordpress.org/browser/tags/3.8/src/wp-
 includes/taxonomy.php#L44 set to `true` for categories and tags] and then
 only taxonomies which set it to `true` are displayed on
 [https://core.trac.wordpress.org/browser/tags/3.8/src/wp-admin/includes
 /class-wp-posts-list-table.php#L266 post listing screens] and
 [https://core.trac.wordpress.org/browser/tags/3.8/src/wp-admin/includes
 /class-wp-media-list-table.php#L138 media listing screens].
