Comment:

 Since both ''admin_email'' and ''wordpress at SERVER_NAME'' won't do for 100%
 of installations, another configuration field might be appropriate to set
 just the e–mail sender for notifications and other system e–mails.

 Maybe just at the time of installation as not to clutter the blog
 settings?
