 I'm attempting to use the categories table for auxiliary post_type's, and
 I'd like to be able to hide those categories from the Write Post admin
 screen.  Can we add a hook for the admin's dropdown_categories function?
 Or in light of Ryan's category reorg's, should this function be using
 get_categories or a similar function?

 Either way, there are no hooks for the category display on the Write Post
 screen.
